Hello ladies!! I always believe you can’t have too many delicious recipes and I have found that the ladies at Fit in 60 Pilates and Barre are great to swap healthy recipes with!! These days we are so busy that it gets difficult to keep healthy eating habits going. Recipes like the one I am going to share with you are quick, easy and don’t have too many ingredients. This recipe is great for a quick, low calorie breakfast, the most important meal of the day, that will give you enough energy to get your day started off on the right! Also, eating a good breakfast also gets your metabolism started early, helping you burn more throughout the day!!! Which we’re never opposed to 😉
2 tbsp olive oil
1/3 cup chopped green onions
1 tsp minced garlic
¼ tsp kosher salt
½ tsp fresh black pepper
1 can chopped San Marzano tomatoes
¼ cup fresh chopped basil
Heat oil in large skillet. Add onions and garlic and sauté 2-3 minutes till fragrant. Stir in salt, pepper, and tomatoes. Boil, and reduce heat, simmering about 15 minutes.
Reduce heat to low and crack one egg at a time over the tomato mixture each separate in the pan. Cover and cook about 5 minutes until the eggs are the desired firmness. Remove from heat and place in a bowl. Sprinkle with fresh chopped basil. Serves 2
